Iguanas I-is-for-Iguanas: The water park not the lizard.  This past Sunday we spent the day at the pool.  The sun was shining and the water inviting!  Plus the food was amazing – I love fish!  It was a day well spent.

Hamaca1H-is-for-Hamaca Style! Most people when they hear the word hammock they first think of the beach.  Sand at your feet, ocean in view, and maybe even a nice breeze – just the right setting to rock yourself to sleep.

Well in my living room I for sure don’t have the beach, unless maybe we are watching one on the T.V. but we do have a hamaca!  I can put my feet up and relax anytime I want (well, after all my work is done).

B-is-for-Baleada: The Best In Town!

I Love BaleadasB-is-for-Baleada: Did someone say baleadas? Oh yes, my daughters are right there for this Honduran food! In fact my youngest will choose a baleada (or 2) over devouring a hamburger. The great part – they are fast and simple.

What is a baleada? There is no English translation for this particular breakfast, lunch, or dinner option. Simply they are made of a flour tortilla, beans (refried), cheese, and mantequia (Honduran version of sour cream). You can add all sorts of other items to make the baleada your own.
