There are so many things to update you on. Just so many it is hard to know where to start, but I am ready to BREAK THE SILENCE. I am ready to shout it from roof tops! It is time to share my very own personal journey & awesome triumph. What could all the ruckus be about you ask?
Well, here goes ……………… I am VEGAN!! You read it right. I am 100% vegan since right before Thanksgiving. Yep, I dared to take this new “lifestyle” on during the hustle and bustle of the holidays!!
The holidays are a crazy time to embark on such an adventure, but that is really what happened. I woke up on a Monday and just went for it. November 17th will forever be a day in history for me.
Honestly this is something I have always wanted to do. In fact, I have tried before but never got very far. Dairy usually kicked me right in the butt. I crave cheese over anything else, including chocolate and other sweets. This craving for dairy products has done me in regularly. Changing to a vegan diet is more for health reasons than anything else. I truly look forward to sharing all the great recipes I am trying out. You are all in for a great treat!
Since this drastic change, it must be told – I feel tons better! I have had more energy and less pain from my Fibromyalgia. My digestive track has been more ON track. Almost most no waging war in my belly. As I eat healthier I feel happier! This what I was truly hoping for.
One thing that was a total surprise after changing my diet was finding I have a GLUTEN sensitivity. Soon after making the changes in what I was putting into my body I began to itch and have hot flashes. It only happened after consuming things like bread, crackers and of coarse SPAGHETTI (darn it)! Having these symptoms in a restaurant with your family was not a gluten sensitivity test I was thinking of, but it did happened. After that incident gluten was banned from lips.
So, really I am a GLUTEN FREE VEGAN!! Strangely – I am LOVING it!!! The truth is there are times it’s frustrating. I have to be creative, prepared and patient (with myself) a lot. Traveling & eating out is the most challenging. While I fumble through this new lifestyle (on and off the road) my goal is to share with you all the in’s & out’s of a traveling vegan – plus all the regular fun stuff our family experiences. There will be vast tips to come.
This has been a huge challenge and venture so far – one that I have been up for this time around. I am so excited to see what the gluten free vegan life has in store for me.
